portabello mushrooms (chopped)

crimini mushrooms (chopped)

yellow onions (diced)

porcini mushroom powder

heavy cream

lemon juice

fresh parsley (chopped)

fresh thyme (chopped)

Asiago cheese (shredded)

For the sauce:

1 1⁄2 c
blackberries (fresh or frozen)
1⁄2 c
honey
1⁄2 c
granulated sugar
4 c
vegetable stock
1⁄2 c
red wine
1 T
shallots (chopped)
1 T
cider vinegar
1⁄4 c
lemon juice
1⁄2 t
black pepper

Instructions

Preparation:

Preheat oven to 400o. In a large bowl, toss mushrooms, porcini powder, onions, celery salt and olive oil until well coated. Spread evenly onto large baking sheet and roast for 15 min or until nicely browned. Remove from oven and let cool 10 minutes. In a medium sized bowl whisk eggs and cream until well incorporated. Add roasted mushroom mix and all other ingredients. Season to taste.

Reduce oven heat 350o. Pour mixture into pie shell and bake until the center of the tart is set, about 30 minutes. Allow to cool 10 minutes before serving. Slices into 8 wedges and drizzle with blackberry sauce.

For the sauce:

Preparation:

Combine all ingredients medium sized pan and simmer until reduced by half, about 20 minutes. Remove sauce from heat and strain. Add back to saucepan and reduce again to sauce consistancy, an additional 10 minutes.
