Gooey Butter Cake
Batter:
3 cups all purpose flour
1 tablespoon baking powder
½ teaspoon kosher salt
4 ounces softened butter
1 tablespoon vanilla extract
2 cups granulated sugar
Two eggs
Filling:
Three eggs
1 ½ pounds confectioners’ sugar
8 ounces softened butter
12 ounces cream cheese
Preparation:
Batter: Mix together the flour, baking soda and salt. Combine the softened butter, vanilla, sugar and eggs. Mix with a whisk or hand-held mixer until smooth. Combine the flour mixture with the butter mixture to create the cake batter. Pour the cake batter into a pre-greased large rectangle baking pan.
Filling: Combine the 3 eggs with the sugar, cream cheese and softened butter. Mix until smooth.
Top the cake batter with the filling, making sure to leave a one-inch uncovered border around the outside. Bake at 375 until just set, about 45 minutes. You still want it to be a bit gooey in the middle.
