Pork Porterhouse Brine

6 ounces onion
3 sprigs sage
4 cups milk
Pinch of nutmeg
2 tablespoons of salt
1/2 teaspoon pepper
 

Preparation:

Julienne onions. Roughly chop sage.  Combine all ingredients and use as a marinade for pork.  Let meat marinate for at least 4 hours or preferably over night.
