Tomatillo Salsa
1 # tomatillo
1 ea jalapeno
1 c diced onion
6 cloves whole garlic
2 Tbls cilantro
kosher salt to taste
black pepper to taste
2 Tbls lime juice
Put the tomatillos in water and peel off the husks.
Blacken in super hot cast iron skillet.
They should be blackened, but still have some bright green left on them.
Add whole garlic cloves and chopped onion to pan; blacken slightly.
Combine these ingredients in a blender and pulse to desired thickness.
Cool, then add chopped cilantro, salt, pepper and fresh lime juice to taste.
