Description

Vanilla batter dipped and griddled. Served with Nat's caramel.

Ingredients

large eggs (lightly beaten)
3 c
milk
2 T
vanilla extract
1 T
cinnamon
1 lf
cinnamon bread (sliced 3/4" thick)

For the Caramel Sauce:

3 c
brown sugar
1 c
light corn syrup
1⁄2 c
butter
1⁄2 c
heavy cream
1 1⁄2 t
vanilla extract

Instructions

Preparation:

For custard: Mix the eggs with the milk, then stir in the cinnalmon and vanilla. If cinnamon clumps, redistribute through the batter.

For french toast: Preheat oven to 350o. Heat a large saute pan on medium-high heat. Add one tablespoon butter and heat until melted and foaming. Dip bread slices into batter and allow to soak briefly. Place bread slices on hot pan and cook on each side until lightly brown about 2-3 minutes per side. Place in heat proof baking dish and cook until cooked through about 5-7 minutes. Remove from oven, plate and top with caramel sauce and additional butter.

For the Caramel Sauce:

For sauce: Combine all ingredients in medium sized saucepan and allow to come to a low boil. Wisk well. Allow to cook 5 minutes. Add a pinch of salt when done.
